Bacon, Pork and Cheese Ravioli

Surprise pockets of meat, cheese, herbs with a blast of bacon flavor in this Ravioli dish will satisfy your craving for Italian Cuisine. Ravioli can also be filled with vegetables like leafy ones- spinach, chard, locally and asian-driven kangkong etc. More like a meatball enveloped in a pasta dough. The video will also show you how to prepare simple tomato sauce, you may add bayleaf (removing leaf before serving) and oregano. Adding sugar to the sauce gives it a sweete-tangy taste.  Enjoy!

You will need:
Ravioli Pasta Dough:
4 large eggs
2 large egg yolks
1 teaspoon olive oil
1 teaspoon coarse salt
3 to 3 1/2 cups  all-purpose flour, plus more for dusting

Combine eggs, egg yolks, olive oil, and salt in the bowl of an electric mixer
 fitted with the dough hook attachment. Add 3 cups flour and begin mixing dough 
on lowest speed. Bring speed to medium-low and knead until smooth, 
occasionally stopping mixer to pull dough off hook and adding more flour as necessary 
to keep dough from sticking, about 10 minutes. Wrap with plastic wrap and refrigerate 
at least 1 hour before using. Sheet out just enough when filled ( not too thin).
Trim excess edges, slice in 6-7 inches wide slabs.Eggwash the whole surface. Scoop uncooked filling


leaving 1 inch allowance to form small pouches or pockets. You may use cookie cutters or a traditonal
ravioli cutter or as simple as a knife to cut into triangles or squeares.

Cooking immediately after shaping: prepare onto a plate, boil pasta water seasoned with salt.

Storing uncooked ravioli: Toss in flour.Place in a seal-in-bag or airtight container and freeze. 
Defrost for 15-20 minutes before cooking.

For ravioil pasta trimmings: you may chop it and use as dumplings for your Asian inspired soups.
Filling:

8 slices bacon,chopped
1 cup mild cheddar cheese
1/2 cup shredded mozzarella cheese ( optional)
1 (6 ounce) package shredded Parmesan cheese, divided
2 tablesppons fresh basil , chopped
350 grams lean ground pork
2 eggs 
2 tablespoons flour,all purpose
2/3 cup cream cheese, softened
1 teaspoon sugar (optional)
1 cup onion ,chopped
1 tablespoon garlic powder
ground black pepper to taste
Combine the ingredients. Use a 1 ounce ice cream scoop to portion on rolled out pasta dough.
4 cups pasta boiling water for cooking ravioli
Simple Homemade Tomato Sauce:
1/4 cup olive oil
1 onion, finely chopped
2 cloves garlic, coarsely chopped
2 teaspoons coarse salt, plus more as needed
black pepper to taste
8-15 chopped tomatoes, concasse ( boiled,peeled,seeded,chopped)
or 2 (28-ounce) cans whole plum tomatoes in their juices, chopped
1 teaspoon sugar
Heat olive oil in a large pot over medium heat. Add onion,  
garlic, and salt and pepper. Cook, stirring often, until onion is soft and translucent,
 about 10 minutes. Add tomato paste and continue cooking 5 minutes more.
Add tomatoes and cook, stirring constantly, until sauce comes to a boil. 
Reduce heat and simmer for 1 hour, stirring every 5 minutes or so to prevent burning. 
Season with salt, if desired.
