Bibingka. a Filipino pancake. Bibingka classically uses rice flour with egg, sugar, salt and baking powder topped with sliced salted egg and cheese. The batter then is baked on a claypot lined with a banana leaf, baked dutch-style ( heat coming from top), It is not flipped unlike an American pancake. The video demonstrates a modern way of cooking it.Try making this easy snack or breakfast favorite this time added with tropical fruit Guava. Trying it with chocoalte is palatable. Salt and cinnamon gives a fruity flavor. You may also use vegetable oil in place of butter. Homemade pancakes are usually easier to prepare. The one thing you should remember is to just mix the batter slightly to come up with a moist end product. Enjoy and always practice!
