Korean Steamed Bun


Fond of trying a new Asian  bun recipe? This  is a simple dough used for a less moist filling like vegetables. Developing recipes is a great way to test your patience and enthusiasm.  Korean cuisine is fond of using chili peppers, onions, sesame oil and soy sauce. Kimchi and Bulgogi are famous classic recipes Koreans are known for. They taste really good. This dish is usually consumed as snack or can be a carry out meal. So please enjoy making it. Photos on making it are provided. Three components to remember 🙂 Dough, vegetable filling and dipping sauce. Meat like chicken, fish, pork or beef can be added too with the filling.

You will need:)
Mandu or Dough:
1/2 cup lukewarm water - 100-110 F
1 t yeast
1/4 t salt
1 T vegetable oil
1/2 t sugar
Combine all in a  bowl. Mix well and let it rest for 10 minutes until bubbles are visible.

Add the flour to the yeast mixture, mix with a wooden spoon for 2-3 minutes, rest until it doubles in size covered:

 1 1/2 cups all purpose flour
Rest in a warm draft free place.

Mix dough to degas, form into a ball and rest, covered for 5 minutes. Portion dough into 8 pieces. Rest for 5 minutes again, covered.Roll each ball into 4 inches diameter ,then fill with cooled vegetable filling on the center. Lift the edges of dough up around the filling while pressing the center to fill the filling in the bun. Put on a cut out white grease proof paper or cupcake liner . I made rough round shapes for this buns:) Enjoy and make more.

Prepare the steamer:)
Put 3-5 cups water in the bottom pan and brush oil on the steaming rack.  Cover and bring to a boil. Meanwhile. Place each shaped and filled buns with 1-2 inches distance from each bun, cover with cheesecloth ,then with actual pan cover. Let rest in a warm place for 20 minutes.Then, place  this rack on boiling pot of steamer. Cook for , steam for about 20-25 minutes until doubled in size.

Dipping Sauce:)
Combine all in a bowl
1/3 cup soy sauce
2 Tablespoons Vinegar
3 teaspoons sugar
 1/2 cup onions
1/8 t sesame seeds, toasted ,you may add more if you wish:)

Served this with Steamed buns with refreshing homemade Fruit Tea on Ice.

Vegetable filling

Mix all and soak for 15 minutes, then squeeze out water
1/4 cup white onions,chopped
1/4 cup carrots, chopped
3/4 cup zucchini
3/4 c leeks
1 cup mushrooms,sliced
1 cup tofu,medium firm ,chopped,wrapped and pressed in cheesecloth to drain excess liquid
1/2 teaspoon salt

Add the following flavorings to the vegetable filling:Mix and cook on a non-stick pan without oil:)Cool completely
1 t soy sauce
2 t sesame oil
1/2 clove garlic, minced
1/4 t black pepper ground
