Lite - Grilled Chicken Curry

Ever tried making chicken curry using fresh curry leaves. This time making a lite version of the dish. The meat was marinated with soy milk to tenderize and was slightly grilled for smokey flavor. Making it classically results to a mustardy color. Some chicken curry renditions uses butter and coconut milk instead. 

Washing chicken or proteins for cooking is optional however doing so won't hurt:) Patting is it with a clean disposable paper towel is essential. So the meat will be set for seasoning and marinating.  Soaking the chicken in the milk mixture may be for 3 to 24 hours.  

Indoor grilling is fun! I Like to brush a little peanut oil on the mesh oh the grill just so the meat will not stick:)  Grill it 4-5 minutes on each side. Cover it with from to  time so It slowly cooks internally. Prepare your Teflon pot , a peanut oil and pan sear the grilled chicken. Add the curry leaves and other herbs excess marinade. Stew for 20 minutes over low heat until meat is tender. Adding a little liquid like chicken broth or water is good then simmer again. Avoiding to add acidic liquids so it will not curdle since milk was used for this dish. 
Enjoy with rice or toasted flat bread as they enjoy it in India.


You will need:
1 whole chicken, chopped into serving pieces
2 Tablespoons Fresh Curry Leaves, chopped
1/ 2 piece red onion, chopped
1/2 piece onion., sliced
2 Tablespoons garlic, chopped
1/4 cup soy milk
2 Tablespoons peanut oil
salt to taste
black pepper to taste
dash of sugar
1-2 cups chicken broth or water
