You will need:
Yield:Makes about 20-22 pieces rolls
2 1/2 cups all purpose flour
1/8 cup powdered milk
1/8 cup powdered milk
2 1/4 t yeast,instant
2 T white sugar
1 t salt
1 egg
1 cup milk,lukewarm
1/4 cup butter,soft room temperature ( but not cool)
Coconut Filling:
1 cup dessicated coconut
1/2 cup butter,soft
1 t vanilla
1/2 light brown sugar
pinch salt
eggwash:
1 egg
pinch salt
2 T cream
Bulk fermentation /First resting until it doubles in size ( see uncovered dough below)
Inverting the bowl
Degasing or ("gently "punching motion) the dough to prepare for next stage of expansion
Scaling or portioning dough
Pre-shaping the dough and rest for 5 minutes, for filling
Flatten the pre-shaped doughs
Filling
Rolling again to seal in filling, seam-side-down. Eggwashing and baking was not filmed. Bake until light golden brown. It will double in size and serve hot!
