This week's Special-Silvana Treat + What you can do with Spinach and Kang Kong Vegetables:)


NEW YEAR SPECIAL :SILVANA COOKIES  Happy 2017:)
Silvana are cookies made of  cashew meringue or dacqoise, sandwiched and filled with french buttercream. It comes in oval and round shapes. To make it different , I made triangles for this recipe. Silvana is a Gateau Sans Rival cookie to make it simple.

You will need:
Silvana
Meringue 
1 Tablespoon vinegar( smear on bowl)
or 1/4 teaspoon cream of tartare
12 eggwhites
2 cups white sugar
2 cups cashew, food processed

On 2  greased and lined half sheet pans:
Evenly pan stiff-beaten dacqoiuse or cashew mixture.
Bake at 300F for 20-25 minutes until light golden brown and crisp, rotate halfway while baking.

Immediately flip over onto a sheet pan with parchment dusted with extra cashew or powdered sugar

Smear or spread prepared  french buttercream. Drizzle more of your coffee extract. Sprinkle more cashew nuts. Top with another layer of meringue, repeat:)Freeze covered.
Slice into triangles. Round shape would have excess off-cuts though.

French Buttercream: ( This quantity is good for 4 pairs of meringue, you may divide recipe into 3 for a single pair of the baked cashew dacqoise or meringue:)
Cook syrup to 135F, thread stage
2 cup sugar
1 cup water

12 eggyolks
(beat until light and add in cooked syrup)
Continue beating until very light, and has cooled completely
Add in:
227 grams butter,soft
2 Tablespoons of rum/vanilla/coffee extract, set aside

My First Sauerkraut Chronicle 
 Whenever I will be filming or editing dessert videos I still try to create something that may be used as a good product for selling. Sauerkraut  ( fermented vegetables in german) or "atchara" in Filipino is a mixture of vinegar, salt, sugar and white pepper , reduced to half until slightly thick and glossy, which is acutally a simple vinaigrette . Classically unripe papaya or green papaya shreded  like cheese mixed with  carrots, raisins, sliced chilli peppers. These recipes  uses sesame oil and toasted sesame seeds.  I didn't have time to cook meals so this is what I usually do, either warm or cold salads that may be consumed with your steamed rice, slices of bread or ramen. This is a good way to give your bottled sauerkruats a new taste . Korean side dishes uses sesame seeds in many of their vegetable sidings. This is healthy and very good too:) Please use a greater amount in weight of your favorite leafy vegetable since this shrinks after it has soaked in our yummy sweet tangy sauce. Enjoy preparing it:


Seasame Kangkong Sauerkraut
You will need:
360 g Kang Kong vegetables, use tender to semi -crisp parts, blanched (boil water, drop in vegetable, fish out the vegies after 3 minutes, not soggy)
or
360 g Spinach,use tender to semi -crisp parts, blanched (boil water, drop in vegetable, fish out the vegies after 3 minutes, not soggy)
3 Tablespoons sesame seeds, toasted and cooled
Vinaigrette: Prepare in a pot, simmer until reduced to half the amount of liquid, Cool completely
1 cup plain vinegar
1/8- 1/4 cup white sugar
1 /2 teaspoon fine salt
1/8 teaspoon white pepper

Toss cooked Kang Kong leaves with the prepared vinaigrette. Add in toasted sesame seeds.
Cool completely. Place in an airtight container, cover , seal and chill. Enjoy and make more of this. When you get busy , you have something to eat that is yummy and healthy:)
