Classic Fruit Cake Recipe & Videos on Taro or "Gabe" Egg Salad Also A Spread, Mock Taro Cheese for Vegans,Taro Risotto and Mashed Taro

It's 2017 and to those of you who did make fruit cakes this year, no worries -fruit cakes may be available year round, you may leave out the brandy soaking and just use simple syrup flavored with mango/pineapple o r classically apricot jam. However fruit cakes soaked in liquor extends the shelf life of the cake and gives that strong flavor fruity, woody, aged, sweet and more flavor profile that makes it a Christmas Cake.  It is best to use dried and sugar glazed fruits for shelf life too. Nuts and fruits may be decreased however flour has to be increased just so cake will have stability, try adding 1 cup flour to the recipe to replace  every cup of fruits omitted. You will need:
2 cups  unsalted butter, soft 
2 cups sugar, divided
12  eggs
1/2 cup molasses
12 cups candied and dried fruits, such as citron, lemon peel, orange peel, sour cherries, apricots, and golden raisins, chopped, divided 
8 cups nuts, such as pili,walnuts and pecans, coarsely chopped
2 1/2 cups all-purpose flour
2 tablespoons ground allspice
2/3 cup brandy, divided
Glaceed fruits, such as figs,raisins or sulatanas, oranges, pears, apricots, peaches, and pineapple, for garnish
Candied cherries green and red
1 cup pineapple mango or apricot jam

Heat oven to 275 degrees. You will need greased ,   lined with parchment  and  greased again with butter or shortening  2 - 9" x 13" loaf pans or five 6 inch round pans.
Cream butter and 2 cups sugar in the bowl until light and fluffy. dd eggs one at a time. Mix in molasses and 2 cups of candied fruit, blending well. Remove batter to a large bowl and add one-quarter of the nuts. Combine all dry ingreadients.
Add remaining candied fruit and nuts, stirring with a spoon. Divide batter evenly among pans; bake until a toothpick inserted in the center comes out clean, 3 to 3 1/2 hours. Brush with 1/3 cup brandy mixed with remaining 1 tablespoon sugar while warm. Let cool on wire rack.
Depan cakes and remove paper liners. Assemble  cakes with glaceed fruits and candied cherries and kumquats. Heat apricot/ mango pineapple jam with 1/3 cup brandy in a small saucepan over medium heat. Strain and brush over fruits to hold in place.

How did you spend your first week of the year? Have you thought of using taro for a business you wish to start on?

Yes, taro is a good replacement for pototoes in this salad and spread. Gabe in Filipino Cuisine is used as a thickener for soups, the tops of taro leaveas are used for a stew in coconut cream. There's so much to discover about Taro or Gabe.  Taro or Gabe in Filipino is a rootcrop that grows underground. Thanks to the farmers who patiently dig up all those crops that we have on the table- french fries, mashed potatos, mojos,etc. Taro is a staple and this is one ingredient you may use for a food product. Just use your creativity.

 Vegetarians may have the Taro grated to make Taro risotto without the dairy to make it lean, just salt and pepper. Or plain as it is, use as a mock cheese for hard core vegans:) Just be creative. Amazingly  be it just boiled and peeled, in some parts of the world taro is consumed just like sweet potatos. Asian Countries as mentioned used it as thickener. Washed, rubbed or brushed Gabe or Taro
Taro Egg Salad Spread
 You will need:
1/4 cup white onions, roughly chopped
1/2 cup mayonaise
1 cup taro,boiled -peeled, cubed
2 eggs, boiled and peeled
salt 
pepper
sugar
celery leaves
2 Tablespoons pickle relish

Combine all and mash or pulse in a food processor. 
Bottle, chill and serve with toasted buns or sell sandwiches. If you have a display chiller, bottle spreads are best to have this on sale.

3-4 pieces of large Taro, boiled, peeled,grated
salt
pepper
Celery Stalk for garnish

Toss and use as your starch.

Taro Mock Cheese
3-4 pieces of large Taro, boiled, peeled,grated
You may use as is like cheese for vegan dishes like pasta, pizza,as a topping.

Mashed Taro
 3-4 pieces of large Taro, boiled, peeled,cubed
salt
pepper
sugar
Saute the ff: and into the taro and seasonings
1/2 piece of white onion
2 -3 cloves garlic chopped
1 piece beef sausage ( use any cured meat )

Celery Stalk for garnish
