Chocolate Victoria Sponge Cake
A Cake base that is mostly used with aerated fillings and light glazes. Why do they call it Victoria Sponge? It was because it was created during the reign of Queen Victoria. This is classically vanilla and plain yellow sponge with raspberry filling that is finished with a dusting of powdered sugar. To make it rich yet lite, I incorporated pistichio component and more flavors in this simple dessert.
