  Enochi, SHiitake Mushroom, Pork Meatloaf and Cheese Quesadilla
Cheesy Quesadilla is like heaven when you bite into it. Just having it plain with cheese, tomatoes and wansuy is great already. This is a great treat if you make this all in advance, cool down filling completely, assemble the pita,tomato sauce, cheese, cooled pre-cooked vegetables, add in chopped vegetbales and par-blister but not too toasted. Cool completely the Quesadillas, place them
or arrange overlapping one piece to each piece on a large seal-in bag. Freeze and thaw out, then cook on a hot pan with a little vegetable oil.

One of the best snacks kids would love, the best to include vegetables on their diet. You may slow down on the use of cheese but they love it.

Vegetarians may totally remove meatloaf and replace it with cheesecloth-drained
tofu.

I am excited to share to you a simple recipe of quesadilla. This is made of Enochi and Shiitake, pork meatloaf and cheese with vegetables. This is also the time to practice your chopping skills. Savoring this with or without sourcream or any dip is already good.Enjoy the recipe! Time to practice making it.






You will need:
6-8 pieces large soft taco wrapper or tortilla or pita
2 Tablespoons of vegetable oil
1 teaspoon of sesame oil
1 cup of tamoto sauce or paste
127 grams of mild cheddar cheese, sliced in batons or large wedeges


4 pieces op shiitake mushrooms, cleaned and sliced
3 pieces of red tomatoes whole, chopped
1 medium white onion, chopped
1 large red bell pepper, chopped ( add in bell pepper variety if you wish:)
1 bunch of Fresh Wansuy leaves, chopped
2 Tablespoons of Soysauce
salt to taste 
white pepper taste

180 grams of Meatloaf, uncookeed 
( You may use 250grams tofu, drained in cheesecloth for vegetarian version)

    Meatloaf: Combine altogether the following ingredients by hand and wrap and
freeze, you may pull out, thaw out and slice: This recipe may be
used as MEATLOAF recipe, serve with good gravy or simple as with
Catsup!
75 grams of ground chicken breast,uncooked
75 grams of lean ground pork,uncooked
1/4cup carrots finely chopped
1 small white onion,chopped
1/4 teaspoon salt
1/8 teaspoon white pepper
pinch of sugar
2 Tablespoons lemon juice or pineapple juice
1 piece egg, beaten
3 Tablespoons flour
1 teaspoon garlic powder (optional)
